The sake brewer is Izumibashi Sake Brewery Co., Ltd., located in Ebina City, Kanagawa Prefecture, which has a history dating back to 1996.


Based on the belief that "sake brewing begins with rice cultivation," they carry out an integrated process of sake brewing, starting from the cultivation of sake rice. We are particular about traditional sake brewing, and carefully finish it using old-fashioned methods and techniques. He carefully assesses the soil, the individuality of the producer, and the characteristics of the rice, and reflects this in his handmade work. The result is sake with a natural, deep flavor.

 

Manufacturer Quato: We use Junmai Ginjo sake "Aya~Irodori~" made from 100% Yamada Nishiki from Kanagawa Prefecture.
By using the traditional method of bag squeezing, which collects the drops that fall due to the weight of the alcohol, the sake has a taste that allows you to fully experience the aroma and flavor.

 

By soaking green coffee beans in the fragrant and gorgeous ``Aya~Irodori~'' for a week to a month, you can enjoy the sweetness of the koji, the umami, and the coffee flavor that are unique to Japanese sake.


The aftertaste is fruity, which is typical of Japanese sake, and provides a refreshing and refreshing feeling.
